Green Congealed Salad Recipe
I’ll bet a lot of you had (or have) grandmothers who made an old-fashioned green congealed salad like this back in the day. This is such a delicious, refreshing treat any time of year. My grandmother to this day still makes this for holidays. It’s so simple to make. The hard part is waiting for it to set!
INGREDIENTS
1 box Lemon Jello (3 oz.)
1 box Lime Jello (3 oz.)
2 cups boiling water
1 cup cottage cheese
4 Tbsp. mayonnaise
10 oz. crushed pineapple
crushed pecans for topping (optional)
INSTRUCTIONS
- Bring water to a boil then add to Jello and mix until dissolved.
- Add mayonnaise and cottage cheese. Mix well.
- Add crushed pineapple. Mix well.
- Pour into casserole dish and top with crushed pecans if desired. Cover with plastic wrap and refrigerate for at least 6 to 8 hours before serving.
